Our passion comes from what nature gives us, the years follow each other and are always different, the grapes, then the wines tell stories specific to each vintage. We ourselves evolve and our desires and ideas themselves evolve too, taking us on new adventures.
Each terroir is unique, each plot at the heart of it too. Our most important terroir is Chouilly at the northern end of the Côte des Blancs. It brings a wonderful minerality to the fore sometimes with saline hints and a marked chalky aspect. In addition, hints of citrus fruits are often present to top it all. As it ages, this Chouilly Grand Cru terroir gives us quite rich and broad-shouldered wines that can enhance the finest dishes.
When you have spent your whole life as a winemaker in the heart of vineyards planted with Chardonnay, you can only feel passion for this grape variety that I think best fits our northern vineyards.
